I might be completely wrong here...But my understanding is that snook is like a generic name.

What they call snook in the U.S. is a different fish to the Australian snook. Going off memory, Australian snook are caught on the west and south coast (down W.A. through to Vic)...I could Google it but I am having a lazy day

Also from memory snook in Australia are caught on the same bait as used for tailor. So fresh fish strips, prawn and shinny metal lures.

Also from memory, snook in Australia are not a target species. They are usually caught as a by-catch when fishing for tailor and snapper.
