I'm a new to the fishing game but my Dad is has been fishing for a LONG time. I have mostly fish for snapper blues around the Nissequogue River. I just got 2 spoons/spinners in the mail today. I heard they're good for snappers but anyone have advice?

Mostly on the type of lures I should be using and times I should be fishing..? Ex: Daytime, Night, 8:00pm, New Moon, ect. Oh and also how do I properly unhook a fish? 'Cause I watched several video's but they seem rather difficult and painful for the fish. (I don't plan on keeping any.., just fishing for fun not food )
