Howto make Fish Jerky | Category: Fishing Talk

Hi there

Wondering if anyone out there makes their own fish jerky?

I got a bit tired of smoked fish and thought I'd try something new.

Bough a food dehydrator and made my first snapper jerky yesterday.
The result is quite good but definitely too salty.

Here is how a made it:

  1. I made a marinade from about 80% teriyaki sauce and 20% soy sauce.
  2. I cut three fish fillets into small evenly sized pieces and marinated it for about 20 hours.
  3. I just chucked it into the dehydrator and left it running on high temperature ~70C or 158F for about 7 hours.



It dried pretty quick because the pieces were quite small.
It's good with beer. Consistency is almost like beef jerky.

Next time I need to make some changes to the marinade though, to make it less salty.
Maybe instead of using store bought teriyaki, I'll make my own from soy sauce, brown sugar and some more spices and perhaps some lemon juice.

Has anyone tried drying fish and perhaps got some recommendations for a nice marinade?

B) Mark, just eliminate the soy sauce part of your marinade,,soy sauce is
very high in salt content just use the teryaki and for a kick put in some
hot sauce. tobasco type sauces are also high in salt content so use a thick
sauce like tapatio or chollula. you could even make a mix of hot salsa and
teryaki I call this a hotyaki sauce its very good on fish. I have made jerky
in the oven at 150 deg. the lowest setting on the oven it takes about four
hours for a full load. another great marinade for fish is any italian salad
dressing. at least overnight in the fridge.

Thanks for the tips. I'll try next time without soy sauce.

I read somewhere to use a salt brine to prevent spoilage during the drying process.
Thats why I added soy sauce to the marinade.

Maybe its better to brine them for a few hours - then wash off the brine and then add marinade?
Not so sure - or I just completely skip the brine.
The fish are super fresh anyway.

Yes your fish is so fresh that when you put them into the dehydrator it will be dried before anything can spoil. we just did all those fish in standard off the shelf Italian salad dressing overnight and then had all the kids over and made fish tacos. Have you ever thought of a meal you really like and started craving it then when you went to get it they were out or didnt have it anymore. then you have to get something else and its just not the same, your brain and tastebuds have been cheated! well I started craving fish tacos and they were so good I think I ate about 7 of em and was miserable after dinner.
So we use 8" flour tortilla,(soft)a small layer of fish prepared anyway you like,a layer of shredded lettuce, a layer of diced tomatoes, a sprinkle of shredded cheese a thin smear of sour cream and a squirt of hot sauce across the top. When I make these I cut up my fillets into 2x2 chunks and just pan fry them in canola oil with season salt and garlic powder til cooked white then shred em apart slightly so they lay in the tacos nice. Of all the marinades for fish my favorite is still teryaki with chopped garlic and hot sauce. I use a premade garlic minced in a jar from the store about two heaping spoons in 8 ounces of teryaki and 4oz of water in a quart ziploc. Put in the hotsauce as you can stand it. maybe 3-4 shakes of the bottle.
Im getting hungry !

Hi mate

wow those fish tacos sound nice. Never tried them.

I will try to make them tonight.
Haven't got soft tacos but still have a pack of hard taco shells - will try with them.

Will also try your marinade next time. Adding garlic and hot sauce sounds awesome.

I should add a recipe section somewhere.

Collected so many nice fish recipes over the years.
Would be good to share them and see how others prepare their fish.

Good on ya! Let me know how the tacos fare on the dinner table. My whole
family loves fish tacos we make em with hard shells too sometimes. I have
a way I make breakfast omlets for fish that I learned in Cabo San Lucas
Mexico Its awesome so maybe we can enter that into a recipe section.
